Three of my very favorite words to hear in a recipe title have to be “easy” and “peanut butter.” And that’s especially true this time of year. I don’t know your life, but around here, I feel like I’m living at 1.5x normal speed while trying to slow down and soak up all the amazingness the holidays have to offer, which means that something, somewhere, sometimes has to take a hit.
But I don’t want to sacrifice my healthy snacking! I need easy-to-make (and easy-to-grab) protein- and energy-packed snacks on the go, and these easy no-bake peanut butter granola bars from Justin’s totally fit the bill.
Hey, it’s better than the peanut butter fingers I often find myself falling back on. Don’t judge.
No-Bake Peanut Butter Granola Bars
Prep time:
Total time:

- 1 cup Justin's Peanut Butter (classic or honey)
- 2.5 cups oats
- ⅓ cup honey
- ½ cup + 1 tablespoon coconut oil (divided)
- 1 teaspoon vanilla
- ¼ teaspoon cinnamon
- ⅓ cup Justin's Chocolate Hazelnut Butter
- In a large bowl, mix Justin’s Peanut Butter, honey, ½ cup coconut oil, vanilla, cinnamon and oats until well combined.
- Firmly press the dough into an 8” x 8” baking pan and place in freezer for at least 20 minutes.
- In the meantime, whisk Justin’s Chocolate Hazelnut Butter and 1 tablespoon melted coconut oil together in a small bowl until smooth.
- Once the bars have set, remove from freezer and spread Chocolate Hazelnut Butter mixture over the top.
- Refrigerate at least 30 minutes, slice into bars and enjoy! Bars will soften at room temp, so we recommend storing them in the fridge until ready to eat!
Are you a nut butter-aholic, too? If not, what’s your go-to? —Kristen
